This sauce is intensely hot but it has a good balance of heat and unique refreshing flavour. Caramelized palm sugar with garlic is the forward note. Followed by pineapple tanginees, and then the quality heat (a delayed heat). This hot sauce is good for any BBQ food as marinate or dip. Pairs well with chicken and meat dishes. Best with pizzas and pastas. Awesome to enhance sambal and curries, making pastries like curry puffs and pies very interesting.
